In their second year of the course our Food Technology students have to present a project at the end of the year. They are divided into groups for this project and each group goes out into a local community, normally in the countryside where there are more crops and also more poverty, and teaches them how to make the most out of one of their products. The idea is that they teach the local community how to avoid wastage and to create more expensive products from their primary crop and also to give an example of good hygiene practices when working with food stuffs. In previous years examples of the products focussed on have been tomatoes, onions and citrus fruits. Pictured in the photo is one of the groups from this year, who made several products out of squash, including gnocchi, bread and jam. They will then write up their project, do some follow-up work with the community and, at the end of the year, present their project in the Institute.
